Spicy parsnip patties

These can be eaten with a green salad or put in a burger bun and served with chips. Serves 4.

Boil 700g parsnips (peeled and chopped) for 10 minutes until tender. Meanwhile, melt 50g of margarine and fry 2 cloves of garlic (peeled and crushed), 1 tsp ground coriander, 1 tsp ground cumin, and 1/2 tsp ground turmeric for 2-3 minutes. Stir in a finely sliced leek and cook for another 3 minutes. Drain and mash the parsnips, stir in the leek mixture, season, and stir in a handful of fresh coriander. When cool, shape into patties and fry for 3-4 minutes on each side.
