Mediterranean puff pastry
These make a great light lunch, warm or cold, but can be messy to eat!
Cut out circles of ready-rolled puff pastry with a pastry cutter. Bake in the oven according to packet instructions (don't worry if they don't rise evenly). Meanwhile, in a frying pan, heat a little olive oil and fry up an onion (peeled and thinly sliced), some courgette (sliced thinly) and some red pepper (deseeded and thinly sliced). Add olives, capers and fresh basil. When the pastry is cooked, spread a thin layer of sundried tomato paste or olive tapenade over the top and heap the cooked vegetables on top.
