Mix of salads

Salads can be prepared the night before and stored in the fridge. Make a couple and serve with houmous. Try these:

Green salad. These can be made more cheaply by buying various salad leaves and mixing them up rather than buying pre-prepared packs. Try lollo rosso, lambs lettuce, watercress, cress, romaine, cos, fresh herbs, and add a dressing.

Coleslaw. Grate carrots, add chopped cabbage and spring onions. Mix with egg-free mayonnaise. For a tasty alternative, substitute grated celeriac for the cabbage.

Bean salad. Mix together various beans and legumes (try chick peas, cannellini beans, kidney beans, sweetcorn and fresh beansprouts. Add a dressing made from oil, vinegar and mustard. Add garlic and/or herbs if you choose.

Potato salad. Simply boil up small pieces of potato, allow them to cool and add egg-free mayonnaise. Season with parsley or chives and black pepper.
