This is a quick and hearty meal in a bowl. Serves 4.
Grill your choice of sausages.
Meanwhile, fry up an onion (peeled and chopped) in a little olive oil. When translucent, add vegetables such as courgettes, peppers and mushrooms. Stir in a tin of vegetable soup (you may need to reserve a little of the liquid), and add the chopped cooked sausages. Season with black pepper, and stir in fresh herbs if you wish. Eat as it is or serve with rice.
