Leek and almond bake
Try this bake with green vegetables and gravy. Serves 2.
Preheat the oven to 200/400/GM 6. Fry 3 large leeks (cleaned, trimmed and sliced) with 2 cloves garlic (peeled and crushed) in oil over a medium-low heat until the leek is very soft. Stir in half a mug of ground almonds. Add 1 tbsp soy sauce, 3 tbsp soya milk and season with black pepper. Press into an ovenproof dish and cook for 35 minutes.
